Muffins are delicious products: of Anglo-Saxon origin, they have also conquered the Italian public with their many variations. In addition to simple soft sweet cakes, there are also various savory alternatives that are easy to make and highly tasty. Freshly baked, they immediately create that family atmosphere of the classic Sunday at home with relatives or friends. They are very popular and, in this article, we will see how to cook savory ham and pea muffins.

Ingredients:

  • fresh peas: 200 g
  • 00 flour: 200 g
  • eggs: 3
  • extra virgin olive oil: q.s.
  • black pepper: q.s.
  • cooked ham: q.s.
  • whole milk: 100 ml
  • parsley: q.s.
  • whole fleur de sel: q.s.
  • grated pecorino cheese: 100 g
  • seed oil: 100 ml

Ham and pea muffins: preparation

The first step required to prepare fantastic savory ham and pea muffins is to grate the pecorino cheese. Then, take the ham and cut it into small pieces: depending on how you prefer, you can make small cubes to make it aesthetically more beautiful in the composition. After cutting it, take a pan, put it on medium heat and throw in the ham for about ten minutes.

Once the ham is well browned, take another pan, heat a pinch of oil and throw in the peas to cook them. Two or three minutes will be enough, just enough time to make them fragrant and, subsequently, you need to add a little pepper and salt to flavor them.

Two more steps are required to chop the parsley and to pour the three eggs into a container. After having beaten them, pour in a little milk continuing to mix everything together.

The mixture will then be completed by adding the fleur de sel, flour and yeast, but always a little at a time to ensure that the whisk mixes well, avoiding that the ingredients may not mix correctly. Once the composition has created a dense and creamy solution, you need to add the remaining ingredients, namely peas, parsley and the grated pecorino cheese at the beginning. Finally, add the seed oil to lubricate the concentrate and mix again, paying attention to the peas.

If you have a piping bag, it would be ideal, otherwise a spoon will also work. In any case, pour the composition you just created into the paper cups, without filling them completely. Then, arrange the paper cups on a baking tray, and bake in the oven at 180° for 30 minutes.
