OUR HISTORY

More than 100 years
of passion, family
and tradition

For over 100 years our company has been producing and marketing artisanal sea salt from Trapani, the most important distinctive feature of this area of ​​Western Sicily, the cornerstone of its identity that has always indisputably characterized it. The Culcasi family is the family of salt: for four generations they have been committed to keeping this production tradition alive.
It all began with the purchase of a salt pan damaged by a flood, then recovered, restored and then embellished with taste and strategy. It was the 1960s and the basins were flooded by the mud generated by the incessant rains, and then became practically unusable. The Culcasi family believed in this intrepid gamble, saving the salt mines from certain burials. Time has proven them right.

THE TRAPANI SALT PANS

Where nature
and man's work meet

The extraction of Trapani sea salt is carried out in one of the most beautiful places in Sicily, at times enchanted, a natural habitat for the suggestive pink flamingos and numerous other species of aquatic birds. Pools and small windmills alternate with the backdrop of the sea that merges with the sky. There is a touch of magic and everything takes on picturesque contours: it deserves to be immortalized, especially at sunset.
This unique place, made up of basins tending towards blue, sometimes white but also red, separated by thin strips of land, with the mounds of dazzling white salt in plain sight, is therefore the backdrop to a story of work and respect for the customs handed down over time. Environment, life, effort and commitment here become one, giving prestige to a city proud of its territory, of the history and culture of salt.

FLAVOURED SALTS

Concentrates of pure essences
from western Sicily

We have decided to dedicate an important part of our work to the preparation of a precious typical and artisanal flavoured salt. We produce and package it following the ancient traditions of our territory that have been handed down for generations, adding spices and aromas that we obtain strictly by hand from the characteristic products of Sicily. Among our excellences we include the Fior di sale flavoured jars whose creation requires care, attention and passion.
We do not use ready-made preparations: we, with our own hands, peel each individual citrus fruit and process it. The low-temperature drying phase is crucial, as it allows the essential oils contained in the peel to be retained.
This product will allow you to flavour dishes, season salads, fish, meat and broths.
A separate chapter is deserved by the flavoured products with spices and aromas that we prepare with exclusively Sicilian aromatic herbs. They come from a small organic company in our area that works them expertly and this allows us to guarantee the standard of craftsmanship of our healthy products: it is just like a home-made flavoured salt.
This way you will add that extra flavour to your dishes and at the table you will be able to amaze friends and relatives.

HOW WE WORK

The birth of our
Sea Salt

Six steps linked together. A long, laborious and meticulous process
carried out by the expert hands of the salt workers, in the wake of memory and legend.

Winter cleaning
of the tanks

The salt pan, filled with water after the last processing, must be emptied with pumps in March, cleaned, leveled and rearranged along the banks, repairing any damage caused by the period of winter inactivity.

Filling
the tanks

Taking advantage of the tides (once also thanks to the power of the windmill), the filling of the tanks begins with transfer operations between them which have specific names and uses.

Salt cultivation

Once in the salting tanks, the water begins to evaporate and the salt finally crystallizes, ready to be crushed and collected at the end of July and August.

The collection
of salt

The salt is arranged in piles by expert workers, the so-called salt workers, in the spaces in front of the tanks. It is then covered with tiles that protect it from bad weather and dirt.

Natural
drying

Of course, the salt must first dry, thus eliminating any small residues of water that may be present. This phase is absolutely natural and occurs thanks to the sun's rays.

Packaging
of products

Once dry, the salt is ground and packaged with great care, the bags are mechanically packaged while the jars are filled and capped manually.
