How to desalt salted cod
A first fundamental step to be able to cook salted cod correctly is to desalt it. This does not mean that it will completely lose its salty flavor, especially if you use types of salt such as the artisanal wholemeal salt from Saline Culcasi, which allows you to obtain very tasty dishes.
The process that leads to desalting salted cod is important to take advantage of various types of recipes that allow you to prepare a high-quality meal.
First of all, you need to brush the salt superficially, then wash the fish carefully under running water; then, leave it to soak in a special container full of water, which must be changed every eight hours so as not to alter the flavor of the fish. After the first day has passed, it is essential to proceed with the removal of the skin, which is done very simply as it will be decidedly moistened, in addition to the bones.
At this point, you can move on to the phase of reducing the fish into slices that must be soaked for thirty-six hours, taking great care to change the water every eight hours as previously.
In the event that you were to buy filleted salt cod, it is best to brush the surface and then wash with running water. The fish must be soaked for a maximum of a couple of days, always taking care to change the water.
How to cook cod in salt
The first recommended step for preparing this succulent dish is to chop the onions very finely: these should then be put to cook in a pan together with a couple of tablespoons of oil and half a glass of water.
This will create a sort of sauce that is best enriched with artisanal whole salt Saline Culcasi.
Subsequently, after the onions have reached a good level of cooking, it is necessary to blend them with wine and then add the herbs, namely garlic, chilli pepper and a handful of parsley. At this point, it is necessary to cook for at least five minutes so that the flavour can become homogeneous and can also remain on the fish.
In the meantime, wash the tomatoes that must be carefully cut into cubes and then combine with the onion, making sure that the heat is off. The same should be done with the potatoes, which should preferably be cut into thin discs and placed inside a pan together with the sauce that was prepared beforehand: all of this will contribute to the formation of what is the cooking bed of the fish.
It should be remembered that it is always preferable to keep at least a couple of spoonfuls of tomato with onions aside so as to flavour even more when needed.
This leads to the use of desalted cod, which should be cut into slices and then placed on the bed that was prepared in the pan, pouring more sauce over it which will give an even more decisive flavour.
Cooking requires 180 degrees in an oven to be preheated and the necessary time is 20 minutes.
