Salt prawns are not only a very simple recipe to make, but also a cooking method that prevents the pulp from drying out, since the temperature remains constant. The rubbery consistency will therefore become a distant memory.
Once the salt crust is removed, you can either enjoy them plain without adding calories, or accompany them with a drizzle of extra virgin olive oil, mayonnaise, cocktail sauce or simple lemon juice. Here are all the steps to bring a second course to the table with honors!

Ingredients:
- fresh prawns: 12 pcs
- coarse salt: 1 kg
- chopped parsley: q.b.
- aromatic herbs: q.b.
- grated lemon zest: q.s.
Prawns in salt: procedure
1. Wash the prawns under cold running water, bend their heads back slightly and remove the black intestinal thread with the help of a toothpick or tweezers. Leave the shell whole, because it will act as a protective shield for the meat.
2. Gently dry the prawns with a sheet of kitchen paper and set aside.
3. Wash the bunch of parsley, dry it and chop it finely with a knife or mezzaluna.
4. In a bowl, mix the parsley, coarse salt, aromatic herbs and grated lemon zest. The latter is available both ready-made in sachets and grated directly from the fruit, but be very careful to exclude the white part, as it is very bitter and therefore capable of jeopardizing the final result.
5. Cover a baking dish with high edges and suitable for baking with a sheet of paper.
6. Spread a uniform layer two centimeters thick of the salt mixture on the bottom of the baking dish and compact with the bottom of a glass.
7. Place the prawns on the layer of salt just created without overlapping them.
8. Cover everything with the remaining salt and compact it with your hands to leave no empty spaces. This step is essential to prevent the prawns from burning during cooking.
9. Bake in a preheated oven at 180° C for twenty minutes.
10. Remove the dish from the oven, let it rest for ten minutes and break the salt crust with a spoon.
11. Carefully remove all the salt from the prawns, shaking them lightly if necessary.
12. Shell the prawns and serve as desired.
Additional tips for preserving prawns in salt
A few extra tips: prawns in salt are excellent both hot and cold and can be stored in the fridge for a couple of days, as long as they are placed inside an airtight container. It is also fine to freeze them, but when you intend to consume them, let them defrost in the refrigerator to make them soft again.
As for the flavoring of salt, no one forbids using the peels of other citrus fruits or mixing them to create a unique and original combo, for this purpose it is possible to use the Riserva del mare flavored salt.
